Recipe: Cheesy Mediterranean Shrimp Boats

 


You're probably going to start to think that ALL I do is Mediterranean. Hang on, I promise more is coming. We've just happened upon a couple of new recipes that we would make again & they BOTH happen to be Mediterranean inspired.
 

Recipe 2: Cheesy Mediterranean Shrimp Boats


Ingredients

1 LB Shrimp, peeled & deveined
Zucchini: 4 sliced length wise
2 tbsp Butter
1 Cup Mozzarella Cheese
1/4 Cup fresh Parmesan Cheese: grated
2 tbsp Cream Cheese
4 Cloves Garlic
1 tsp Italian Seasoning
1/2 tsp paprika
1/4 tsp Crushed Red Pepper (optional)
Olive Oil
Salt & Pepper: to taste




Method

Set Oven to 400 degrees (F)
Grease 9X13 baking pan (I used a glass baking dish) with Olive Oil
Scoop out Zucchini leaving about 1/4 in on sides & bottom. 
Place hollowed out Zucchini in baking dish & spray with olive oil.
Bake for approximately 10 minutes, until Zucchini have softened just a bit. 
While the Zucchini boats are baking place butter, Shrimp, "meat" of Zucchini that was scooped out, Garlic, Italian Seasoning, Paprika & Crushed Red Pepper in a skillet. Add Cream Cheese at the end. 
Cook until Shrimp is pink.    
Remove pan with Zucchini from oven. Spoon Shrimp mixture into Zucchini boats, top with Mozzarella & Parmesan Cheese  
Bake for an additional 10-15 minutes, until cheese is melted. You can use your broiler to brown the tops, but be careful not to over cook or the boats will become too soft. 

We served ours with a Spinach Side Salad.
